In late May 2022 we took our first trip back to Kentucky since the pandemic began. We visited several distilleries we were quite familiar with and then one we had never been to and had only tasted a few of there whiskeys over the years. It was a 1.5hr drive from Louisville to Danville, but I have to say, it was well worth the drive. Wilderness Trail sits on a 168-acre campus with 6 rickhouses and several more under construction. Currently, they are barreling about 250 barrels of new whiskey a day. Part of what makes their product so unique and delicious, is the Sweet Mash process that they are using. They begin with an entirely fresh “batch” each time. By not acidifying the mash, they produce a more flavorful and softer product. The whiskey goes into the barrel, after being cut with pure Kentucky limestone water, at a low proof. 110 Proof for the bourbon and 100 Proof for the Rye. This adds to the complex flavors and great texture of each whiskey.

We were so enamored with their products that we wound up choosing a total of three barrels! One a single barrel bourbon and two rye barrels, that we blended into a small batch. The bourbon is 4 Years 6 Months old from rickhouse B-E20-H6. The barrel was ISC #4 char and the yeast strain was their FP1. The Rye is also 4 Years 6 Months from Warehouse B with the yeast strains 921 and 927 lending to its complexity.

I am telling you now… DO NOT sleep on this distillery or these two picks. They are among our favorites in a long time of picking barrels!

Nose: Toffee, apricot, vanilla, orange peel, cola, sweet oak, barrel char

Taste: Caramel, candied ginger, orange and nutmeg

Finish: Long and sweet. Really coats the tongue. Baking spices, rye spice and pepper.

Alcohol: 52.55%/105.10 Proof
